A simple & healthy way to start the day

My favorite way to spend a slow Sunday morning is by enjoying a nice cup of iced coffee with this delicious avocado & egg breakfast wrap. This recipe is so simple and easy to create. The wrap is folded into quarters to be easily handheld and mess-free! Try this wrap & it will soon be in your weekly breakfast rotation. <3

Ingredients
1 tortilla (I use Food For Life’s Ezekiel 4:9 Sprouted Whole Grain Tortilla)
2 pasture-raised eggs
1 tbsp grass-fed butter (or avocado oil)
1/2 avocado
1 handful arugula
Drizzle of balsamic vinegar
Instructions
Prep your tortilla by cutting one line to the center of the tortilla, so the tortilla can be folded as shown in the photos below.
Scramble 2 eggs in grass-fed butter. Place eggs onto the top left quartered section of the tortilla.
On the next top right section, mash an avocado onto the tortilla. (I suggest mashing instead of the slices shown in the photos. Mashing prevents the avocado from easily sliding out.)
Toss arugula in a drizzle of balsamic vinegar and place onto the bottom right quartered section.
Then, starting with the empty section, fold up to cover the eggs. Next, fold over to cover the avocado. Finally, fold down to cover the arugula.
Now you have a completed wrap. Throw back onto a heated pan to crisp up both sides.
Serve & enjoy! <3
