Pumpkin Chickpea Blondies

The Perfect Healthier Fall Treat

INTRO

These pumpkin chickpea blondies are inspired by the viral chickpea blondie recipe originally created by a registered dietitian named Jaclyn Savage. The addition of pumpkin to these fiber filled blondies creates the perfect healthier fall treat. This recipe will now be a staple for the season. Enjoy!

INGREDIENTS

1 can chickpeas

1/3 cup maple syrup

1/3 cup pumpkin puree

1/3 cup almond butter

1/3 cup almond flour

1/2 tsp baking soda

1/2 tsp baking powder

2 tsp vanilla

1/4 tsp salt

2 tsp pumpkin pie spice

1/2 cup Enjoy Life semi sweet chocolate chunks

INSTRUCTIONS

Preheat oven to 350 degrees.

In a blender or food processor, mix together chickpeas, maple syrup, pumpkin puree, almond butter, baking soda, baking powder, vanilla, salt and pumpkin pie spice until just combined (try not to over-mix).

Then, transfer to a small mixing bowl. Fold in almond flour completely and then fold in chocolate chips.

In a parchment lined 8×8 baking tray, evenly spread batter. Place in the oven for ~35 minutes. Leave to cool for at least 30 minutes, but the longer you wait to cut in the better! (I typically wait around 1-2 hours).

Garbanzo beans are a source of fiber, protein, iron, folate and phosphorus. The fiber in garbanzo beans contain digestive promoting properties. The soluble fiber in garbanzo beans breaks down into butyrate, a bacteria that positively impacts the gut microbiome.

Raw almond butter is a good source of monounsaturated fats helping to lower LDL cholesterol and raise HDL cholesterol.
