With parmesan farro

The combination of baked red peppers, red onions and zucchini paired with parmesan farro, greens and your choice of protein creates a warm, satiating and delicious dinner.
INGREDIENTS:
1/2 cup chopped red bell pepper
1/2 cup chopped red onion
1/2 cup chopped zucchini
*Protein of choice (ex. chicken, tofu, chickpeas)
1/8 cup nutritional yeast
1 tbsp paprika
2 tbsp avocado oil
1/2 cup cooked farro
1/8 cup grated parmesan
1/8 cup chiffonade basil
1/2 cup chopped spinach
Salt, pepper, garlic powder and red pepper flakes to taste
INSTRUCTIONS:
Preheat oven to 400 degrees. Drizzle avocado oil onto a sheet pan and place chopped red bell pepper, red onion and zucchini. Season with garlic powder, salt and pepper. Add your protein of choice and season with nutritional yeast, paprika, salt and pepper. Place in the oven for ~20 minutes (variant on protein of choice). Toss veggies and protein half way through baking.
Cook Trader Joe’s 10 minute farro completely. Drain almost all water and place back on the stove on low heat. Add parmesan, basil, salt, pepper and red pepper flakes. Stir on low heat until parmesan melts down and the rest of the water evaporates.
Serve roasted veggies and parmesan farro with chopped spinach and top with parmesan.
