Simple Mills Chia Seed Pancakes

Topped with Nectarines & Honey

INTRO:

Simple Mills pancake mix made with almond flour, coconut flour and sweetened with cane sugar is one of the best ingredient pancake mixes out there. Adding chia seeds to the batter increased omega 3 fatty acid and nutrient content. These measurements yield about 5 small/medium sized pancakes. Topping with nectarines and honey creates a unique and craveable pancake.

INGREDIENTS:

1 1/2 cup Simple Mills pancake mix

2 eggs

3 tbsp water (or milk)

2 tbsp avocado oil

1 tbsp chia seeds

1 yellow nectarine

2-3 tbsp honey

INSTRUCTIONS:

In a mixing bowl, combine Simple Mills pancake mix, eggs, oil, water and chia seeds. Stir until just combined, try not to over mix.

On the stove heat a pan on medium heat, adding a drizzle of avocado oil to the pan. Pour pancake mixture onto pan. Flip once the edges are cooked. Brown the other side, then remove from pan.

Top pancakes with honey, nectarines or any other choice of topping & enjoy.
