Nectarines, Chia Pudding & Coconut Yogurt



Introduction
Late summer calls for vibrant and flavorful nectarines. This Golden Yogurt Bowl pairs creamy yogurt and chia pudding with sweet honey and cinnamon-spiced nuts for a beautifully balanced, satisfying breakfast or snack.
Ingredients
1 nectarine
3/4 cup yogurt (my favorite is the Harmless Harvest Unsweetened Coconut Yogurt)
1 tbsp raw, unfiltered honey
1 tbsp pecan pieces
1 tbsp slivered almonds
Dash of cinnamon
Chia Seed Pudding
2 tbsp chia seeds
1 tbsp hemp seeds
1/2 cup coconut milk
1 tbsp raw, unfiltered honey
Dash of cinnamon

Instructions
Prep Chia Pudding in advance by combining chia seeds, hemp seeds, coconut milk, honey and cinnamon in a sealable container. Mix well. Seal and store in the fridge for at least 3 hours or until milk has fully absorbed.
(Optional) Lightly toast slivered almonds and pecan pieces on a dry pan over the stove on low heat for 3-5 minutes, constantly shaking the pan to avoid burning. Pour into a small ramekin and toss in a dash of cinnamon.
Once the Chia Pudding is set, gather all ingredients to begin assembling. In a small bowl, scoop yogurt and chia seed pudding. Top with sliced nectarines and nuts. Drizzle honey.
