With balsamic veggies & fresh basil

Ingredients
(2 servings)
1 package Trader Joe’s Frozen Cauliflower Gnocchi
1 can rinsed & dried chickpeas
8 quartered Brussels Sprouts
1/8-1/4 red onion, sliced
1/8-1/4 cup shaved or shredded parmesan or pecorino
4 fresh basil leaves, chiffonade
1 tbsp avocado oil
2 tbsp balsamic vinegar
Paprika, garlic powder, dried basil & sea salt to taste
Instructions
Preheat oven to 425 degrees.
Mise en place: Rinse & dry chickpeas. Quarter Brussels sprouts. Slice red onion. Chiffonade basil. Shave or shred parmesan.
In a medium-sized mixing bowl, add Trader Joe’s Cauliflower Gnocchi, chickpeas, Brussels sprouts and red onion. Drizzle in avocado oil and balsamic vinegar. Season with paprika, garlic powder and dried herbs. Mix well.
Line a large baking tray with parchment paper. Place seasoned gnocchi and veggies onto the baking tray. Place in the oven for 25–30 minutes. Toss 2-3 times throughout.
Serve warm, topped with shaved or shredded parmesan, fresh basil, sea salt and more balsamic vinegar as desired. Enjoy!
